Crispy Dal vadai

The vadai or vada is a famous south Indian dish.We make many types of vadai at home.The common one is urad dal vadai(medhu vada).Other types of vadai include masala vada,keerai vada etc. But this is a different style vadai made with 3 dals.We all think we should not eat fried food.But actually vadai is a healthy food, if you eat it once in a while.That is once in a week is fine. This vadai is rich in protein and vitamin B.If we use full black urad dal with black lentils it will be more healthy.

Ingredients
Urad dal -1 cup
Chana dal-1/2 cup
Moong dal -1/4 cup
Grated coconut - 5 tablespoons
Curry leaves - 25 leaves 
Black Pepper -3 teaspoons
Oil for frying 
Required salt
Method
  • Wash and soak chana dal and moong dal for 1 hour.Wash and soak  urad dal for 1 hour sepertaly. After an hour filter the water from dal using strainer. 
  •  Grind the dal to a coarse mixture in a blender. Don't add water. Pluse the blender in reverse for several  times to get the correct mixture. Don't over do it.Plusing the blender correctly is important to get crispy vadai  first grind urad dal then the chana dal and moong dal.At last add both and grind to a coarse mixture.Transfer to a bowl.
  • In a blender add pepper and make a coarse powder. To the dal mixture add  pepper,salt,curry leaves and coconut mix it well.The mixture should be well binded. To check flatten the vadai in your  palm .It should hold to a perfect shape if the vadai mixture is well binded.If not add little water.Flatten the vadai on your palm and reverse in a  plastic foil. Flatten all  vadai.
  • In a heavy buttom Kadai add oil  for deep frying and heat it in medium flame .Then do the heat checking by adding a small portion of vadai mix. If it comes up without browning the  oil is in correct temperature.
  • Now gently drop the flattened vadai in  the oil  you can fry 3-4 vadai in a batch.Don't turn the vadai for 2 minutes after that flip to other side.Once it is crispy and brown drain the vadai to a colander.Fry the other batches  of vadai in the same manner.Don't add too many in a batch and ensure that the oil is not too hot.
